Root Vegetable and Lentil Stew

Shopping List

  • 1 x packet of V and Easy Too Good To Be Stew Recipe Sauce Mix
  • 150g dry red lentils
  • 150g dry Puy lentils (green lentils)
  • 50g chopped leeks
  • 1 x Large Onion, chopped
  • 200g chopped carrots
  • 200g chopped potatoes
  • 200g chopped turnip
  • 200g choped celeriac
  • 1100ml water

Method

  1. Place all the vegetables and pulses into the slow cooker pot
  2. Blend the V and Easy Too Good To Be Stew Recipe Sauce Mix with the water, add to the slow cooker pot, stir thoroughly.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW until the vegetables are tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
  4. Remove the lid & stand for 5 minutes before serving.

Top Tip – Gordon recommends you smear a thin layer of oil around your slow cooker before adding your ingredients to prevent excess sticking.
