Pulled Pork Mini Sliders and Crunchy Slaw

Shopping List

  • 1x 75g Gourmet The Pig Easy American BBQ Style Pulled Pork (cooked per packet instructions)
  • 1x Shredded Red Cabbage
  • 2x Carrots, Coarsely grated
  • 1x Red Onion, thinly sliced
  • 2x Tablespoons of Mayonnaise
  • 1x Tablespoon Wine Vinegar
  • 1x Tablespoon Extra-Virgin Olive Oil
  • Salt and Pepper to taste
  • 4x Slider Bread Buns
  • Onion Rings (optional)

Method

  1. Place the shredded cabbage, grated carrots and sliced red onion into a large bowl.
  2. In another bowl, whisk together the mayonnaise, wine vinegar and extra-virgin olive oil, season and then toss with the vegetables.
  3. Assemble the sliders by slicing the buns, add a spoonful of pulled pork and top with crunchy slaw. Top with the bun lid and an onion ring, holding it in place with a small wooden skewer.
