V and Easy Mushroom Cassoulet with Fennel and Kale

Shopping List

  • 1 x packet of V and Easy Vive Le Veg Cassoulet Recipe Sauce Mix
  • 100g chopped celery
  • 150g chestnut mushrooms
  • 1 x sliced red onion
  • 100g kale
  • 500ml water

Method

  1. Add all the vegetables to the slow cooker pot
  2. Blend the V and Easy Vive Le Veg Recipe Sauce Mix with the water, add to the slow cooker pot, stir thoroughly.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW until the vegetables are tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
  4. Remove the lid & stand for 5 minutes before serving.

Top Tip – Gordon Recommends adding chopped cherry tomatoes and basil.
