Mixed Pepper and Butternut Squash Tagine

Shopping List

  • 1 x packet of V and Easy Supreme Green Veggie Tagine Recipe Sauce Mix
  • 350g diced butternut squash
  • 1 x onion, chopped
  • 1 x sliced green pepper
  • 1 x sliced yellow pepper
  • 1 x sliced red pepper
  • 1 x 400g tin chopped tomatoes
  • 400ml x water

Method

  1. Place all the vegetables into the slow cooker pot
  2. Blend the V and Easy Supreme Green Tagine Recipe Sauce Mix with the water, add to the slow cooker pot, stir thoroughly.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW until the vegetables are tender and cooked through and the sauce has thickened (keep covered during cooking, cooking times may vary between slow cooker models).
  4. Serve immediately with couscous or flat bread.

Top Tip – Gordon recommends adding a sprinkling of almonds or fresh coriander and serving with couscous, vegan or gluten free flatbread.
